WHO WANTS RAINBOW CAKE?!?!
Every time I saw rainbow cake, I giggle. It is so fun to say!
We’ve all seen layered cakes all over Pinterest.
Last Saturday, I tried my hand at making one of the rainbow cakes. No specific reason, I just wanted to bake something and try something new.
I just used two boxes of white cake mix. I substitute in equal amounts milk for the water and applesauce for the oil. (I do this for all boxed cake/cupcake mixes I use). I made both boxes up in a big bowl and then would pour a bit into a smaller bowl, add the food coloring and then pour into a 9 inch round pan. I just eyeballed the size of each layer. As you can see, I started with the red/pink layer which is much larger than the blue and purple at the bottom. I had two 9 inch round pans so I baked two layers at the same time for about 18-20 minutes.
After baking, I wrapped each layer in plastic wrap and stuck it in the fridge to cool. When I was all finished, I started stacking the layers on the plate with icing in the middle. I just used store bought icing – 2 cans of buttercream and 1 strawberry. I mixed them together and added a few fresh strawberries. When I was putting the layers together, I made the icing thicker around the edges than in the middle because my layers were a little uneven. It turned out that this really doesn’t matter as long as you stack the layers pretty evenly on top of each other.
You can see that the layers don’t quite sit evenly on top of each other around the edges. When I did the crumb layer on the whole thing, the gaps were easily filled in.
I chilled the cake in the fridge overnight because I was too nervous to cut into it right away. But the next day I used a big knife and cut myself a piece. It was so beautiful, I think I had the biggest smile on my face when I showed Jeff. (He already knows I’m a huge dork and that I get so excited over the littlest things).
Isn’t it beautiful?! LOL. I am so proud that it came out looking somewhat similar to Martha’s.
My layers aren’t as thin and the icing isn’t as thick in between them but I like it better that way. Mine looks more like an actual rainbow than choppy layers. I had read somewhere that the food coloring will darken as it bakes so I didn’t use very much when making my layers. It did darken a bit but definitely not as much as I thought. This was definitely a lot easier than I thought it would be and am excited to have a new favorite dessert to bring to parties.
So now someone needs to come eat this cake because I’ve already had like 3 pieces of it and no matter how skinny you cut the slices, they are still huge!
