Today I want to share with you two of my favorite breakfast/brunch recipes.
First, I’d like to share another wonderful Banana Nut Bread Recipe. I have previously posted about my absolute favorite recipe here. While that recipe does produce some delicious bread, you might as well just inject that bread into your behind. I saw this recipe on Pinterest and its simplicity convinced me to give it a try instead of sticking with what I know.
This recipe originally comes from 8 Weeks to a Better You Recipes. I tweaked it just a bit according to my tastes.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9×5 inch loaf pan.
- In a large bowl, combine flour, baking soda and salt. In a separate bowl, mix together applesauce and honey. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Fold in walnuts and raisins, if desired. Pour batter into prepared loaf pan.
- Bake in preheated oven for 55 to 65 minutes, (I baked it for 60 minutes and will probably take it out 5-10 minutes early next time I make it because I like it more gooey) until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
I really enjoyed this Banana Nut Bread and I don’t feel quite as guilty eating half a loaf a slice and instantly gaining a pound. I’ve been having a slice of this bread warmed with some butter for breakfast the past few mornings. I’ll definitely be making this one again!
Secondly, I’m going to share with you a recipe for an Omelet Casserole that my mom makes every Thanksgiving and Christmas morning. She puts it in the oven when we leave for church and by the time we get home, it is ready to go.
Ingredients
4 cups. hash browns (I prefer shredded)
16 oz. pork sausage
1-2 medium onions, chopped
10-12 eggs, beaten
1/2 cup milk
Cheddar cheese, shredded
Directions
- Preheat oven to 350 degrees. Lightly spray a 13×9 glass baking dish. Line the bottom of the dish with the hash browns. If you like your hash browns crispy, like I do, then brown your hash browns in a skillet according to package directions before you put them in the baking dish. If you don’t, then you can just take them straight from the freezer and put them in the dish.
- Saute the onions with a little bit of olive oil, set aside. Brown the sausage with a bit of olive oil and drain. Mix in the onions.
- Layer the sausage and onions on top of the hash browns.
- Beat the eggs in a bowl and mix in 1/2 cup of milk. Also mix in as much shredded cheddar cheese as you like. I usually add in quite a bit.
- Pour the egg mixture over the hash browns and sausage/onions. Sprinkle more cheese on top.
- Bake at 350 degrees for 60-75 minutes or until egg is thoroughly cooked.
- Serve with salt and pepper to taste. Enjoy!

I make that very same casserole and it is to die for!!!!
And fireflies? How I miss them. I live in the deep, deep south and fireflies don't venture this far. I'm from Illinois and summer wasn't summer without the magic twinkling of fireflies when night took over. My girls always get so excited when we're visiting places that have fireflies. One of God's sweetest creations, that's what fireflies are.
