Ever since making pies for Thanksgiving, I’ve had an intense craving to bake. Jeff asked why I was so obsessed with it recently and I told him that it is Christmas and baking is what you do at Christmas! Because of finals, i didn’t get to do as much baking as I went shopping for but there is still time. Here is what I have done so far.
The first thing that I made was fudge! I use the recipe on the back of the marshmellow creme jar and having thrown that jar away, I can’t post it for you. But here are some pictures.
It actually makes quite a lot so I wrapped some up in gift bags to give as gifts to some of my friends. I’ve found that lining the pan with tin foil is essential and that you should let it set in the frig overnight. Then lift the foil out of the pan and peel back from the fudge before you try to cut.
Next I made these simple peanut butter turtle type treats. They are so easy and so good! All you do is line a baking sheet with parchment paper (optional) then lay out rows of mini pretzel twists. Place a mini reese’s peanut butter cup on each pretzel. Turn on the oven and stick inside, no need to wait for the oven to preheat. In about 5-7 minutes, the chocolate will have begun to melt. Pull out the tray and press one pecan half into each peanut butter cup. Let cool in the refrigerator and enjoy. They are yummy, bite sized goodness that everyone is sure to enjoy.
